The cake Tenerina is a speciality and the pride of the city of Ferrara. Prepared with a base of dark chocolate, butter, sugar, eggs and very little flour, baked once has the distinction to remain low and with a heart tender and moist. A real treat for lovers of chocolate.

INGREDIENTS
- 200 gr dark chocolate
- 125 gr butter
- 2 eggs
- 100 gr sugar
- 2 scant tablespoons of flour
- pinch of salt
RECIPE METHOD
- Melt the chocolate in a double boiler until it becomes creamy and smooth.
- Add the butter cubes and let the mixture cool.
- Meanwhile, whip the egg yolks with the sugar, whisk well until the mixture is light and fluffy.
- Always beating, add the butter and chocolate mixture to the egg yolks and the sugar and flour.
- Pour the cream into a large bowl. If the butter is too thick, add a little milk, should be smooth and creamy.
- Separately, whip the egg whites with a pinch of salt, beat until it forms a compact white cream and then, embed them gently into the chocolate mixture (from bottom to top).
- Grease and flour a cake pan with a diameter of 24 cm and pour in the cake batter.
- Bake in a preheated oven at 180 degrees for 25-30 minutes, then turn off the oven and let cool the cake, taking the oven door open. After, place it on a platter and sprinkle with powdered sugar.
